Breakfast Tacos

Tacos are one of my favourite food groups. I could eat them breakfast, lunch and dinner if I was allowed! There is something so comforting and irresistible about a taco, not to mention the possibilities.

This is just one of the many taco dishes I love to make. In this case, feel free to veganise it with a tofu scramble(recipe coming soon).

Ingredients

Flour or Corn Tortillas (gluten-free if needed)

Butter

Eggs (1 egg per tortilla)/ Tofu

Red Bell Pepper

Coriander

Guacamole

Sour Cream

Chilli Sauce

Salt & Pepper

Method

Whisk eggs and season with salt and pepper.

Make the guacamole, chop up the bell pepper and coriander.

Cook on medium heat, add in enough butter for the number of eggs. The best-scrambled eggs take patience so enjoy the process!

When the eggs are a nearly ready warm up the tortillas in the microwave. I like to do them as they are needed so everyone gets a warm one.

Assemble the tacos by starting with the sour cream, then add a layer of guacamole. Add the eggs next. Top the eggs with the bell pepper and coriander. The final step at some hot sauce!
