Easy & Healthy Frittata Recipe

Frittata
(the beauty of this dish is you can use any vegetables or cheeses you like - this is only inspiration)
1 Red Bell Pepper cut into bite-size chunks
1 Courgette halved and thinly sliced
12 Cherry Tomatoes Halved
Olive oil
50g Feta Cheese
8 Eggs
Salt
Pepper
1. Heat oven to 180c.
2. Cut up the bell pepper and courgette.
3. Heat 1 to 2 tbsp of olive oil or any neutral oil.
4. Cook the courgette and peppers until softened or to desired consistency.
5. In a large bowl crack 8 eggs into it and whisk until yokes have been incorporated.
6. Once the pepper and courgette has cooked set aside to cool. Do not add to the eggs until they are cool.
7. Half the cherry tomatoes and crumble the feta.
8. Add to the eggs.
9. When the courgette and pepper is cooled add to the eggs.
10. Season the egg mixture with salt and pepper. Mix to combine.
11. Grease your frittata dish with butter or use parchment paper.
12. Bake in the oven for 20-25 minutes until golden on top and set throughout. Use a knife and if it comes out clean you know it is done.
13. Remember every oven is different so keep an eye on it.
