One Pan Leftover "Spam" Fried Rice

This is one of those recipes that really doesn't require instructions but here I am sharing it with you. At the time of this photo, I had seen someone I follow make "spam" fried rice. I don't personally eat spam but the idea of recreating this person's vegan 'spam" fried rice recipe was calling out to me.

As many of us can relate to what happened next, I decided today was the day I was going to make the vegan "spam" fried rice. So, I got all excited made my way to the fridge and low and behold I had none of the same ingredients except for the tofu and rice. Feeling slightly disheartened I started racking my brain for something else to make.

It then hit me, the beauty of a dish like this you don't have to have the same ingredients, in fact, every time you make this dish you can customise it to whatever leftovers you have on hand.

So here we are, I'm sharing this recipe but make it your own! Use what you have!

INGREDIENTS

Tofu

Any leftover vegetables

Onion (spring onion preferred but not essential)

Garlic

Herb of choice

Leftover Cooked Rice

Coconut Oil

Sesame Oil

Soy Sauce

RECIPE

Cut up the tofu into bite-size squares. If your tofu is already cooked amazing this will be even faster.

While you cook the tofu finely chop the onion, Mince the garlic. Roughly chop your fresh herb of choice.

Heat some coconut oil on medium-high heat, or whatever oil you have on hand. Fry of the tofu until golden brown on all sides. (If your tofu is cooked already use this step to warm It up again in the pan)

If like me you only had a white onion on hand then remove the tofu to one side and add it in. Reduce the heat to medium. Use a splash water instead of more oil. Keeping splashes of water if the onion starts to dry out or brown. After 3-4 mins add in the garlic and cook for a minute. If you have spring onions then do not add them now.

Add in the rice and leftover veg and increase the heat to medium-high. Toss to combine. Once the rice and veg have heated through add in the tofu. Toss to combine.

Add in the spring onions and the fresh herbs now leaving some for garnish.

Add in 1 to 2 tablespoons of soy depending on the amount of food you are making. Less is more you can always add more at the end.

Add in 1 to 2 teaspoons of sesame again dependent on the size of your food.

Toss to combine.

Taste it and adjust the seasoning to taste.

Serve, add the garnishes and enjoy!

I highly recommend this with some Sriracha.
