Fresh Summery Cabbage Salad

Cabbage is an underrated vegetable. I love it. I make many different dishes from all over the world using it. It’s so versatile and has so much to give in a dish.

Here I’m showing you how to create a fresh vibrant salad that with have everyone going back for seconds.

INGREDIENTS

¼ White Cabbage - finely sliced

Cherry Tomatoes

½ Large Sweet Onion

! bunch Coriander

1 tsp of Granulated Sugar

Salt

4 tbsp White Wine Vinegar

Sesame Oil

Pepper

METHOD

Finely slice the cabbage and add it to a bowl with the sugar, ¾ tsp salt and vinegar. Put aside and let “pickle’ for 30 mins up to 24 hours (refrigerate if overnight).

Chop up the remaining ingredients.

Once the cabbage has “pickled” add in the chopped ingredients. Add in 1 tsp sesame oil. Mix to combine.

Taste and season with salt and pepper to taste. Remember you added salt earlier to make sure you taste first!
