The Ultimate Homemade "Marinara" Sauce

Spaghetti has been an obsession of mine for as long as I can remember! I am always reminded of how I couldn't say spaghetti and came out with some hilarious combination of letters in an attempt to say spaghetti!
In particular, I have always loved a tomato sauce or if we were being technical a version of a traditional marinara sauce.
Like most of my other recipes, they are based on "traditional" dishes but I just loved added my spin to a dish.
Honestly, I just can't help myself!
What I love about this recipe is you don't need many ingredients and most of them are pantry staples. Its the perfect meal if you are in a pinch or you just want to feel warm and cosy. I made this yesterday when it was pouring with rain and it was the perfect meal while I cuddled up inside.
Quick, easy and mouth-watering.
(serves 2)
Ingredients:
1 can Chopped Tomatoes/ Passata
1 tbsp Tomato Purée
1/2 Sweet White Onion
4 Garlic Cloves
1 tsp Dried Oregano
1 tsp Dried Chives
1 tsp Dried Dill
1 tsp Chilli Flakes (or to taste)
Drizzle of Olive Oil
Parmigiano Reggiano (sub in vegan parmesan)
Salt & Pepper (to taste)
Spaghetti (depending on how many people are eating)
Method:
Finely chop the onion and mince the garlic. Keeping them separate for now.
Bring a pot of water to the boil. Add salt to the water before adding in the spaghetti when the water is boiling. Cook to the packet instructions or to taste.
Heat a drizzle of olive oil in a pan on medium heat. Add in the onions and sautée for 3-4 minutes until the onions are translucent.
Add in the garlic and stir frequently for about 1 minute.
Now add in the dried herbs and chilli flakes. Stir to combine.
Add in the tomato paste and stir to combine. Cook for one minute and then add in the chopped tomatoes or passata.
Season with salt and pepper to taste.
Let this cook for about 10 minutes on medium-low. Place a lid over it to stop it from spitting everywhere.
Reserve half to a full cup of pasta water when the pasta is ready depending on how much pasta you are making.
In the same pan where the pasta was cooking mix the sauce with the spaghetti. Add some pasta water to help the sauce stick to the spaghetti.
Plate and grate as much parmesan as your heart desires!
